Pizza catering can mean several very different things. It may describe restaurant pizzas delivered in boxes, a food truck serving individual orders or a mobile kitchen making every pizza at the event.
Olive Wood Pizza is built around the third model. We bring commercial mobile ovens, an experienced chef team and a complete production setup to the event. Dough is stretched, topped and baked on-site in ovens operating as hot as 900 degrees. Finished pizzas are sliced and replenished throughout the contracted service window, allowing guests to try different varieties and return for more.
That distinction matters. Live-fire pizza catering is not simply a different way to transport food. It changes the food, the service and the energy of the event.
What happens when a mobile pizza caterer arrives?
The team arrives before service to unload, position the oven, establish safe work zones, set prep stations and light the fire. Placement is coordinated with the host, venue or planner so the oven is close enough to support efficient service without interfering with guest circulation, rentals or other vendors.
During service, the operation works like a temporary pizzeria. Dough is stretched and topped in small batches. Pizzas enter the oven, bake rapidly at high heat, and move to the buffet while they are still hot. The menu is rotated so guests see a consistent mix of familiar and more distinctive options.
At the end of the contracted window, the team breaks down the mobile kitchen. Olive Wood asks the host or venue to provide the buffet tables or another suitable serving surface, such as an outdoor bar or kitchen counter. That allows remaining food to stay available after the operational equipment has been removed and the party continues.
What is normally included?
Standard Olive Wood Pizza service includes the mobile oven or ovens, the chef and service team, operational prep tables, workstations, tools, setup, breakdown, continuous pizza production during the contracted window, compostable plates, napkins and utensils, and the serviceware and display pieces used for the buffet.
Depending on the package, the menu may also include salads, hot pastas, fire-roasted sides, appetizer platters, grazing tables, tray-passed appetizers and dessert platters.
Standard pizza service is self-contained and does not require access to a venue kitchen, power or water. Some enhanced action stations are different and may require power; those requirements should be confirmed during planning.
How many guests can mobile pizza catering serve?
The right answer depends on equipment, staffing and production discipline. A single consumer-grade oven and a small crew cannot be evaluated the same way as a fleet operation.
Olive Wood Pizza serves events ranging from approximately 25 guests to 5,000+ guests. Smaller gatherings may use a compact rolling oven. Larger weddings, corporate events and productions may require commercial trailer ovens, multiple crews or multiple service points.
At peak capacity, one Olive Wood team and oven can produce as many as six approximately 10-inch pizzas every 60 to 90 seconds. Real event output varies with menu complexity, access, service style and guest flow, but the capacity allows the team to keep replenishing the buffet instead of asking guests to wait for individual orders.
How does the menu work?
Olive Wood's packages start with a deliberate balance of classics and signatures. Cheese, pepperoni and Margherita give every crowd familiar choices. Signature selections add combinations such as All the Meats, OBG, Garlic Mushroom, Pesto Chicken, BBQ Chicken and seasonal pizzas.
Each approximately 10-inch pizza is normally cut into six slices. Olive Wood plans more than one pizza per contracted guest so people can sample several types and return to the buffet. The production allowance does not shrink simply because salads, pastas or sides are included.
For larger or more formal events, the pizza can be one part of a broader Italian menu. The current offerings include Caesar, Arugula and Italian Chopped salads; Penne Marinara, Vodka Sauce, Bolognese and other pastas; fire-roasted meatballs and vegetables; appetizer and dessert platters; grazing tables; and optional passed hors d'oeuvres.
What about dietary restrictions?
A varied pizza menu naturally supports vegetarian guests, and Olive Wood can also plan vegan, dairy-free, pork-free, beef-free, halal-friendly and kosher-style options. Kosher-style service is not certified kosher.
Gluten-free cauliflower crusts are prepared in individual pans to reduce contact with the oven surface. Separate tools, peels, screens, cutters, gloves and preparation procedures are used as part of strict allergy protocols. However, Olive Wood works with flour throughout the mobile kitchen. Airborne flour and other cross-contact risks cannot be completely eliminated, so the environment should not be represented as certified celiac-safe.
Guests with severe allergies or celiac disease should share their needs before the event so the team can explain the process clearly and determine whether the service is appropriate.
What does a venue need?
Rolling ovens generally require a flat, hard-surface route at least 36 inches wide, without steps. A properly sized ramp or elevator may work when access is otherwise restricted.
Trailer ovens need a safe drive-in route, adequate turning space and legal parking for the service period. Depending on the trailer and event layout, the footprint is approximately one to two standard parking spaces. The host or venue must also provide the buffet tables or another suitable serving surface.
The best time to identify access issues is before the event agreement is finalized. Photos, measurements, loading instructions and a venue contact can resolve most questions quickly.
How long does service last?
Most packages include either 90 minutes or two hours of continuous buffet-style pizza service. More elaborate events may use three- to four-hour service, multiple meal waves or a custom schedule.
"Continuous" means the team plans and produces food for the contracted guest count throughout the agreed service window. With an accurate count, Olive Wood plans enough dough and ingredients to avoid running out while still maintaining variety.
How much does it cost?
Olive Wood Pizza packages currently start at $1,250 for 25 guests. The total depends on guest count, package, service time, menu upgrades, event date, travel and any enhanced staffing or rentals requested.
Published package prices do not carry a service or administrative charge. Standard staffing is included. Local sales tax is additional, and gratuity is optional. Travel is included for the first 35 driving miles from the Olive Wood kitchen; beyond that radius, the charge is $10 for each additional one-way mile. Special venue permit charges, when required, are passed through transparently.

7. What route and operating space does the oven require?
8. Is the caterer licensed, insured and health-department compliant?
9. Can the team provide a certificate of insurance when the venue requests one?
